Meat Loaf Camp Dinner

This recipe will serve 4-5 very hungry people.

Ingredients

  • 1 pound lean ground beef
  • 3/4 cup Bisquick baking mix
  • 12 crackers crushed
  • 1 package dry onion-mushroom soup mix
  • 1 6 ounce cans V-8 juice
  • 1 carrot grated
  • 1/8 teaspoon pepper
  • 3 medium potatoes cut into 8ths
  • 4 slices cheese bread
  • 1 can sliced mushrooms

Directions

  1. Line dutch oven with foil and preheat over coals.

  2. Mix together hamburger meat, Bisquick, crackers, onion soup mix, V-8 juice, grated carrot and pepper.

  3. Place in a mound in the bottom of your dutch oven.

  4. Cut each potato into eight small wedges, arrange on top and sides of meat.

  5. Dump canned mushrooms on to the top of this, even the juice.

  6. Put lid on and put coals on top of lid. Cook for 45 minutes or until center of meat is done and potatoes are tender.
