Ingredients
- 1Tbsp. brown sugar
- 2 tsps. butter ((I use Smart Balance)
- 1/3 C. pecan halves ( I used walnut halves)
- 3 Tbs. oil ( Canola)
- 5 tsp. cider vinegar
- 1 can (14 1/2 oz) sliced beets ( I used fresh beets)
- 1 medium Golden Delicious apple, cored and diced

Melt sugar and butter in skillet, add nuts. Cook and stir over low heat 3-4 min. until nuts are coated and caramel colored.; cool.

Combine oil and vinegar; toss with beets and apple. Add nuts just before serving and serve over lettuce if desired.
