Ingredients
- 450g stewing beef
- 1/2 tsp salt
- 1/2 tsp ground pepper
- 2 tablespoons beef dripping
- 1 branch rosemary
- 2 sprigs thyme
- 1 onion finely chopped
- 3 ribs of celery finely chopped
- 2 carrots, sliced into 1/4 inch rounds
- 3 medium potatoes, peeled & cut into 1 inch pieces
- 2 cups homemade stock
- 2 cups red wine
- 1/2 cup tomato paste
Directions

Sprinkle the beef with salt & pepper then set aside.

Melt the dripping in a casserole pot over a medium-high heat – add the rosemary & thyme & fry gently for 2-3mins then remove from the pan.

Add the beef & brown for 5 mins then remove from the pot.

Add the onion, celery & carrots and fry for about 6 mins until tender.

Return the meat to the pan & add the potatoes.

Add the stock & wine then stir in the tomato paste.

Cover and put in the oven on a medium to low heat for about 2hrs.

Season & serve
