Burger Balls

Approximately 1g carb per burger ball
Prep time: 35 minutes
Cook time: 8 minutes
Serves 6 people

Ingredients
- 1/2 lb block cheddar cheese
- 1/4 cup olive oil, divided
- 1 tsp minced garlic
- 3 tsp minced onion
- 2 lbs ground beef
- 1 egg
- 1/2 cup bacon bits
Directions

Cut cheese into 1/2 inch cubes and place in freezer to chill

Preheat oven to 450

In a large bowl, combine beef, egg, onion and garlic

Form beef into 2 inch balls; press with your palms to slightly flatten them

Push a small amount of bacon bits and a cheese cube into the ball and close beef around it to make a seal

Place olive oil in an -oven safe saute pan and warm over medium-high heat

Place burger balls in heated pan so that they are not touching (you will likely have to do 2 batches); sear the balls by rolling them around in the pan

After 1-2 min of searing, place the entire pan in preheated oven and cook 5-7 min
