Buffalo Chicken Bites

added in chopped celery and used shredded mozz instead of cheddar

Ingredients

  • 3 cups shredded chicken
  • 1/3 cup hot sauce
  • 3 1/2 oz. fat- free cream cheese
  • 1 cup shredded cheddar (or mozz)
  • 1/2 cup green onions chopped (or celery)
  • 1/2 cup flour
  • 2 eggs
  • 3 cups corn flakes crushed

Directions

  1. Preheat oven to 350

  2. In large bowl , combine shredded chicken (can use rotissere chicken), hot sauce and cream cheese and mix well. Stir in shredded cheese and onions (I swapped out with celery) and set aside

  3. Use 3 separate bowls set out flour, eggs and crushed corn flakes

  4. Scoop chicken mixture and make balls, first roll in flour, then dip in egg and lastly coat with cereal- makes about 30 balls

  5. Place balls on a sheet and bake for 20-25 min
