Chicken Bacon Chowder

Ingredients

  • 5 large chicken breasts
  • 1-1/2 packages bacon
  • 3 cups chicken broth
  • 12 oz cream cheese
  • 3 cups heavy cream
  • 3 tbsp butter
  • 3 stalks celery, chopped
  • 2/3 bag frozen pepper/onion mix
  • 3 tsp minced garlic
  • 2 tsp salt
  • 1.5 tsp pepper
  • 1.5 tsp basil
  • 1.5 tsp thyme
  • 3 tsp garlic powder

Directions

  1. Turn crock pot on low and put in vegetables, chicken broth (keep back about 1/3 cup), butter, and salt; cover to begin warming

  2. Cut bacon into small pieces and cook until very crisp; remove from pan to crock pot

  3. Leave a small amount of bacon grease in the pan and use it to sear chicken on both sides

  4. Remove chicken and cut into small chunks; use remaining chicken broth to de-glaze pan and pour it into the crock pot

  5. Add all remaining ingredients to crock pot and stir well; cook on low for 6 hours

  6. Stir well before serving as the soup will separate
