“Kapanki” (Czech Drop Noodles)

To make a quick chicken soup I use the “Lipton Dry Chicken Noodle Soup Mix”. I follow the basic directions for the soup but will add 1 chicken bouillon cube and 1 extra cup of water. Then I will drizzle my “kapanki” mixture into this soup. Of course you can use your own home made chicken broth.
My son quickly learned to make this when he went off to college…he liked it better than Ramen and it was his “go to” soup when he wasn’t feeling well.

Ingredients
- 1 envelope Lipton Dry Chicken Noodle Soup mix
- 1 cup water
- 1 chicken bouillon cube
- 2 or 3 eggs depending on the amount of noodles you want
- flour
- extra water
- salt to taste
- optional: Dry (or fresh) Parsley
Directions

Make the Lipton Chicken Noodle soup as directed; adding one extra cup water and one bouillon cube. You can add the optional dry parsley at this time.

Break eggs into a GLASS measuring cup. You can use as many eggs as you want depending upon the size of your pot of soup.

Add an equal amount of water as there are eggs. (That’s why you put in a glass measuring cup, so you can see how much water to add.)

Beat eggs and water together with a fork.

Mix in flour until mixture is the consistency of thick gravy.

Slowly pour mixture into slowly simmering broth. Be sure to move the stream of “kapanki” around in the soup so a long stream will be formed.

Simmer just until “kapanki” are set.
