Cream Puffs

I haven’t made these myself…but always loved Mothers.
These make an impressive company dessert.

Ingredients
- 1 cup water
- 1/2 cup margarine
- 1 cup flour
- 1/2 teaspoon salt
- 4 eggs
Directions

Bring water to a quick boil, stir in margarine. When melted, reduce heat to low. Add flour and salt.

Beat vigorously with a wooden spoon until mixture pulls away from pan.

Remove from heat and beat hard after each addition of egg, one egg at a time.

Drop by tablespoonful, 2 inches apart, onto an ungreased cookie sheet.

Bake at 400 degrees for 40 to 50 minutes.

Cool and fill with your favorite custard or chocolate pudding.

Can be sprinkled lightly with powdered sugar just before serving.

HERE IS A GOOD FILLING: For a good and easy filling you can make instant vanilla or chocolate pudding. Whip some whipping cream, do not add sugar, and fold some whipped cream into the pudding. Pop or slice off top of cream puff and fill with pudding mixture.

Do not fill cream puffs until you are ready to eat them.
