Mom’s Rice Pudding

Haven’t tried.
I don’t know who “Mom” is! Husband got this recipe at a Boy Scout Camp Out.

Ingredients
- 1 cup uncooked rice
- 1 quart milk
- 1 cup sugar
- 2 eggs
- 1 teaspoons vanilla
- 1/3 cup raisins (optional)
- cinnamon as needed
Directions

Cook rice until soft.

Beat eggs, sugar, vanilla and milk together.

Mix rice and egg/milk/sugar mixture together. Add raisins if desired. (I would use golden raisins.)

Pour into a glass oven proof baking dish.

Bake at 350 for about 45 minutes. A “skin” will form on top during baking, stir under and continue cooking until thickness desired.

Near the end, sprinkle with cinnamon.
