Ingredients
- 4 oz butter, room temperature
- 1 cup sugar
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/2 tsp ginger, ground
- 2 eggs
- 3 cups spaghetti squash, baked and shredded
- 1/4 cup milk (or orange juice)
- 2 cups flour, all purpose
- 1 Tbsp baking powder
Directions

Cream butter & sugar & salt. Add in vanilla, cinnamon, ginger, eggs, spaghetti squash. Mix well. Add in milk/orange juice. Add in flour & baking powder (adjust liquid to thick muffin batter consistency).

Baking in oven 35-45min, 350degrees, in a 9 inch round cake pan.
