Calico Salad

Ingredients

  • 2 cans white shoe-peg corn, drained
  • 1 can french style green beans, drained
  • 1 can LeSur baby peas, drained
  • 1 small jar diced pimentos, drained
  • 1 cup celery, finely sliced/diced
  • 1/2 green bell pepper, diced
  • 1 bunch green onions, thinly sliced

  • MARINADE:
  • 3/4 cup wine vinegar
  • 1 cup sugar
  • 1/2 cup salad oil or olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Directions

  1. Combine all canned and fresh vegetables.

  2. Bring marinade ingredients to boil.

  3. Cool slightly, pour over vegetables.

  4. Chill overnight.
