Dan’s Potato Salad

Ingredients

  • 2 to 2 1/2 pounds red-skinned potatoes, leave skins on
  • 2 to 3 hard boiled eggs, chopped
  • 2 to 3 tablespoons dill pickle relish
  • 1 tablespoon yellow mustard
  • 1 cup real mayonnaise (not Miracle Whip)
  • 1 to 2 ribs celery, diced
  • 1 medium onion, chopped

Directions

  1. Boil potatoes in salted water with skins on.

  2. When done, cool so you can handle them and chop.

  3. Mix all the ingredients together and it is ready to serve.
