Mexican Black-Eyed Pea Soup

Ingredients

  • 3 cans Black Eyed Peas
  • 1 tube of Owen's Pork Sausage
  • 1 medium Onion, chopped
  • 1 Green Bell Pepper, chopped
  • 1 cup of celery, chopped
  • 1 can diced tomatoes, do not drain
  • 2 tbsp. chili powder
  • 2 tbsp. brown sugar
  • 1/4 tsp pepper
  • 1 tsp garlic salt

Directions

  1. Cook pork sausage: crumbled, browned and drained

  2. Add onion, bell pepper, celery

  3. Cook until vegetables are limp

  4. Add remaining ingredients

  5. Cover and simmer for at least 30 min
