Chicken Tortilla Soup

Ingredients
- 1 package Chicken Tenderloins
- 1 onion, chopped
- 2 jalapenos, chopped
- 1/4 cup cilantro, chopped
- 1 can Rotel, drained
- 1 can whole peeled tomatoes
- 4 cans chicken broth, 56 oz
- 1 can corn, drained
- 1 tsp minced garlic
- splash of lime juice
- Dash of salt, pepper, chili powder, cayenne pepper, cumin
- 2 tbsp. vegetable oil
- Tortilla Chips
- Shredded Cheese
Directions

Pour 1 tbsp. oil in pan. Saute onion, garlic, jalapeno and cilantro.

Put Rotel and canned tomatoes in blender. Add vegetables. Blend.

Pour 1 tbsp. oil in pan. Add blended mixture. heat on medium until bubbling, stirring occasionally.

Pour tomato mixture in crock pot.

Pour 1 tsp oil and splash of lime juice in pan. Cook chicken with spices. Set aside and let cool.

Chop/shred chicken. Add chicken, corn and broth to crock pot. Stir

Cover. Let cook on low for 4 hours.

Serve with tortillas and shredded cheese
