Chicken Tortilla Soup

Ingredients

  • 1 package Chicken Tenderloins
  • 1 onion, chopped
  • 2 jalapenos, chopped
  • 1/4 cup cilantro, chopped
  • 1 can Rotel, drained
  • 1 can whole peeled tomatoes
  • 4 cans chicken broth, 56 oz
  • 1 can corn, drained
  • 1 tsp minced garlic
  • splash of lime juice
  • Dash of salt, pepper, chili powder, cayenne pepper, cumin
  • 2 tbsp. vegetable oil
  • Tortilla Chips
  • Shredded Cheese

Directions

  1. Pour 1 tbsp. oil in pan. Saute onion, garlic, jalapeno and cilantro.

  2. Put Rotel and canned tomatoes in blender. Add vegetables. Blend.

  3. Pour 1 tbsp. oil in pan. Add blended mixture. heat on medium until bubbling, stirring occasionally.

  4. Pour tomato mixture in crock pot.

  5. Pour 1 tsp oil and splash of lime juice in pan. Cook chicken with spices. Set aside and let cool.

  6. Chop/shred chicken. Add chicken, corn and broth to crock pot. Stir

  7. Cover. Let cook on low for 4 hours.

  8. Serve with tortillas and shredded cheese
