Sharon’s Jelly Roll

Ingredients

  • 1 cup flour sifted
  • 3/4 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup corn oil
  • 3 eggs separated
  • 6 tablespoons water
  • 1 teaspoon vanilla
  • 1/4 teaspoon cream of tartar

Directions

  1. Grease pan lightly and line with wax paper and grease paper lightly.

  2. Mix together and sift into a large bowl the flour, sugar, baking powder, and salt.

  3. Make a deep well and add in this order the oil, egg yolks, water and vanilla.

  4. Beat with a spoon until smooth.

  5. Add cream of tartar to egg whites and beat until they form stiff peaks.

  6. Gently fold (do not stir) the first mixture into egg whites until well blended, pour into prepared pans and bake at 350 degrees for 12 minutes or until done.

  7. Wet cloth and roll cake in it until cool, then unroll and spread jelly on cake and roll up again.

  8. A tart jelly works well or a lemon curd filling.
