Ingredients
- 1 cup flour sifted
- 3/4 cup sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 cup corn oil
- 3 eggs separated
- 6 tablespoons water
- 1 teaspoon vanilla
- 1/4 teaspoon cream of tartar
Directions
-
Grease pan lightly and line with wax paper and grease paper lightly.
-
Mix together and sift into a large bowl the flour, sugar, baking powder, and salt.
-
Make a deep well and add in this order the oil, egg yolks, water and vanilla.
-
Beat with a spoon until smooth.
-
Add cream of tartar to egg whites and beat until they form stiff peaks.
-
Gently fold (do not stir) the first mixture into egg whites until well blended, pour into prepared pans and bake at 350 degrees for 12 minutes or until done.
-
Wet cloth and roll cake in it until cool, then unroll and spread jelly on cake and roll up again.
-
A tart jelly works well or a lemon curd filling.
