Open Face Grilled Cheese with Bacon & Tomato

This makes a great lunch, just one slice of bread.

Ingredients

  • 1 slice bread
  • 1 or 2 slices of your favorite cheese
  • 1 or 2 slices of bacon
  • 1 thick slice tomato

Directions

  1. Very lightly butter bread and grill slightly in a small skillet.

  2. Place on grill pan and add your cheese to this.

  3. Add a thick’ish slice of tomato.

  4. In the skillet lightly fry the bacon until almost done but not crispy, 1 or 2 slices.

  5. Place bacon over tomato in a criss-cross fashion.

  6. Place under broiler until bacon sizzles and cheese is melted.
