Arizona Lemon Pie

I don’t know…but I thought the use of the rinds made this pie bitter. But it is very lemony.

Ingredients
- 1 large lemon
- 1 1/2 cups sugar
- 1/2 stick margarine softened
- 4 eggs
Directions

Quarter (or even smaller pieces) lemon and remove all seeds. (cut off the ends of the lemon)

Put everything in blender and process until pureed. If any large pieces of lemon peel remain, remove and discard.

Pour into unbaked pie shell and bake for 35 minutes at 375 degrees.
