Heavenly Key Lime Cheese Cake Pie

Ingredients

  • 2 large eggs
  • 14 ounce can sweetened condensed milk
  • 1 package unflavored gelatin
  • 1/2 cup fresh key lime juice
  • 8 ounce cream cheese softened
  • 4 ounces sour cream
  • 8 ounces non-dairy topping or 1/2 pint heavy cream whipped
  • 9 inch graham cracker pie crust

Directions

  1. Beat eggs in medium bowl with mixer on high for 2 minutes. Beat 2 minutes on medium while adding sweetened condensed milk and unflavored gelatin.

  2. Pour mixture into saucepan, cook on low to simmer, stirring constantly until thickened, approx. 15-20 minutes.

  3. Remove from heat and stir in 1/4 cup fresh key lime juice, stir until smooth and thick.

  4. Let cool while you finish the next step.

  5. Whip the cream cheese, sour cream and remaining 1/4 cup key lime juice until smooth, fold in the cool whip or whipped cream, then the cooked mixture.

  6. Pour into pie crust.

  7. Garnish with key lime slices.

  8. Refrigerate until set, approx. 1 1/2 hours.
