Applesauce Cake

Ingredients

  • 1 1/2 cups sugar
  • 1/2 cup margarine
  • 2 eggs or 1/2 cup egg beaters
  • 2 cups sweetened applesauce
  • 3 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground cloves
  • 1/2 teaspoon allspice
  • 1 3/4 teaspoons baking soda
  • 1 cup finely chopped walnuts
  • nonstick spray

Directions

  1. In a medium bowl, mix the sugar and margarine

  2. Add the eggs and beat well

  3. In a separate bowl, sift the dry ingredients together, and then add alternately with the applesauce to the egg mixture

  4. Mix well

  5. Stir in the nuts

  6. Coat a 2 1/2-pound coffee can with cooking spray and pour the cake batter into the can

  7. Bake in a covered slow cooker on high for approximately 3 1/2 hours, or until done

  8. Makes 6-8 servings
