Split Pea Soup

Ingredients

  • 1 bag green dried split peas
  • 1 small onion chopped or 1/2 large onion
  • 1 clove garlic minced
  • 1 to 2 stalks celery small diced
  • 1 to 2 potatoes diced into 1 to 1/2 inch chunks
  • 1 to 2 carrots dice into small pieces (cut carrot length ways a couple times...then dice)
  • Bacon or ham bone or ham hock
  • salt & pepper to taste
  • water as needed

Directions

  1. Sort and rinse peas.

  2. Place in smaller soup pot. Cover with water.

  3. Add everything else.

  4. Bring to a boil, stirring frequently.

  5. Simmer covered lightly for about 1 hour or until peas are tender. You MUST STIR THIS OFTEN or it will stick and burn. Add additional water if needed…but this is meant to be a thick soup.

  6. TIP: You might want to get a spoonfull and taste to see if peas are done and if it needs more salt.

  7. This will make a meal for me, but hubby likes a ham sandwich on the side.
