Nathan’s Vegetable Casserole

Really delicious…however you MUST use the canned vegetables…not frozen.

Ingredients
- 2 cans mixed vegetables, drained
- 1 cup helmans mayonnaise
- 1 can cream of mushroom soup
- 1 8 once can sliced water chestnuts, drained & rinsed
- 1 medium onion finely diced

- TOPPING:
- 1 tube Ritz Crackers
- 1/2 cup softened margarine
Directions

Mix together vegetables mayonnaise, cream of mushroom soup, water chestnuts and onion. (I think I would slightly saute the onions in a little butter to soften and precook them.)

Pour into casserole dish.

Bake 15 minutes at 350 degrees.

TOPPING: Crush Ritz Crackers and mix in margarine.

Spread on top of casserole and put back in oven to brown top…maybe about 10 minutes.
