Nathan’s Vegetable Casserole

Really delicious…however you MUST use the canned vegetables…not frozen.

Ingredients

  • 2 cans mixed vegetables, drained
  • 1 cup helmans mayonnaise
  • 1 can cream of mushroom soup
  • 1 8 once can sliced water chestnuts, drained & rinsed
  • 1 medium onion finely diced
  • -
  • TOPPING:
  • 1 tube Ritz Crackers
  • 1/2 cup softened margarine

Directions

  1. Mix together vegetables mayonnaise, cream of mushroom soup, water chestnuts and onion. (I think I would slightly saute the onions in a little butter to soften and precook them.)

  2. Pour into casserole dish.

  3. Bake 15 minutes at 350 degrees.

  4. TOPPING: Crush Ritz Crackers and mix in margarine.

  5. Spread on top of casserole and put back in oven to brown top…maybe about 10 minutes.
