Pan-Fried Sole

Ingredients

  • 1/2 cup dry bread crumbs
  • 1/4 cup grated Parmesan
  • 400 grams sole fillets, patted dry
  • 3 tbsp olive oil, divided
  • 2 tbsp butter or margarine, divided

Directions

  1. Combine bread crumbs and Parmesan; mix well.

  2. Dredge fish strips in crumbs to coat completely and transfer to a plate.

  3. In a skillet, heat half the oil and half the butter over medium heat.

  4. In batches, add fish and cook for 5 minutes on one side; turn over and cook for another 2 minutes or until lightly browned.
