Pan-Fried Sole

Ingredients
- 1/2 cup dry bread crumbs
- 1/4 cup grated Parmesan
- 400 grams sole fillets, patted dry
- 3 tbsp olive oil, divided
- 2 tbsp butter or margarine, divided
Directions

Combine bread crumbs and Parmesan; mix well.

Dredge fish strips in crumbs to coat completely and transfer to a plate.

In a skillet, heat half the oil and half the butter over medium heat.

In batches, add fish and cook for 5 minutes on one side; turn over and cook for another 2 minutes or until lightly browned.
