(from cokerlj’s recipe box)
Recipe calls for regular peeled white potatoes. For a different look try using red skinned potatoes with skins on.

Ingredients
- 1 envelope Lipton onion-mushroom soup mix
- 1/2 cup olive oil
- 1/4 cup margarine melted
- 1 teaspoon thyme leaves (optional)
- 1 teaspoon marjoram leaves (optional)
- 1/4 teaspoon pepper
- 2 pounds potatoes peeled and quartered
- Sprinkle with minced parsley prior to serving.
Directions
-
Preheat oven to 450 degrees.
-
In a small bowl or large measuring cup combine all ingredients except potatoes.
-
Prepare potatoes and place in shallow baking or roasting pan.
-
Drizzle the above mixture over potatoes and stir around to coat thoroughly.
-
Bake, stirring occasionally, 60 minutes or until potatoes are tender and golden brown. If potatoes seem to be drying out, add just a little hot water for steam and cover with foil during last half of cooking.
