Lemon or Lime Scout Pie

Quick and easy. I have a couple other versions of lime pie in this book also.

Ingredients

  • 3 egg yolks
  • 1 can sweetened condensed milk
  • 1/2 cup lemon OR lime juice
  • 1 9 inch graham crust
  • grated lemon rind or lime rind if desired

Directions

  1. TIP: If you use a 10 inch pie crust you will need to double this recipe.

  2. Beat egg yolks, add milk, lemon juice, stir. You can use lime juice instead of lemon juice and you can add a little grated rind if desired.

  3. Pour into graham crust and chill.

  4. OR: If you are worried about contaminated egg yolks: Pour mixture into the pie crust, heat oven to 350 degrees, bake for 15 minutes. Remove from oven and allow to cool for at least 10 minutes before you refrigerate.

  5. Top with cool whip before serving.
