Ingredients
- 7 quarts peeled, blended fresh tomatoes
- 4 medium onions chopped
- 6 cloves garlic chopped
- 1/2 box pickling spices
- 3 whole cinnamon sticks
- 1 1/2 cups 90-100 grain vinegar
- 1 1/2 cups sugar
- 3 1/2 teaspoons pickling salt
Directions

To peel tomatoes…dip into boiling water, cool to handle and skins will slip off.

Place tomatoes in a blender along with the onions and garlic.

Blend until you have 7 quarts total combined with the onions and garlic.

Strain through cheese cloth to remove seeds.

Tie pickling spices and cinnamon sticks into a spice bag or cheese cloth.

mbine and simmer everything…spices, tomatoes with onion garlic, salt, sugar and vinegar into pot and simmer until it is reduced to 1/2.

Pour into pint jars. Place lids and rings on tight.

Process in hot water bath for 20 minutes from returning to boil.
