Mandarin Orange-Corn Slaw

Ingredients

  • 3 cups three color cole slaw blend (see note below)
  • 3 medium size green onions chopped
  • 1 11 ounce can Green Giant Mexicorn with green peppers drained
  • 1 11 ounce can mandarin oranges drained
  • -
  • DRESSING:
  • 1/2 cup light mayonnaise
  • 2 tablespoon sugar
  • 1 tablespoon red wine vinegar
  • 1 tablespoon lime juice

Directions

  1. NOTE: If three-color cole slaw blend is not available substitute 2 cups shredded green cabbage, 1 cup shredded red cabbage and 1/2 cup grated carrot.

  2. In large bowl, mix salad ingredients.

  3. In small bowl, mix dressing ingredients until well blended.

  4. Add dressing to salad; toss to coat.

  5. Serve immediately or cover and refrigerate until serving time.
