Pot Roast Hash

See my recipe for Pot Roast in Electric Skillet. This is what you can do with left-overs…also using electric skillet. Or if you made roast in the oven this is also how you would make this hash.
My kids never liked roast but loved the left over hash…go figure.

Ingredients

  • Left over pot roast cut into 1 inch cubes or smaller. At least 2 cups or more.
  • Left over potatoes from roast cut into 1 inch cubes or smaller OR if you didn't have any left over potatoes peel and cut up raw potatoes. At least 2 cup or more.
  • Left over carrots (very optional) also cut up into circles. If you didn't have any left don't add any extras.
  • 1 medium onion diced
  • Left over gravy and/or water to cover all in your skillet.
  • Salt only if needed.
  • Pepper to taste (this is one of the few things I actually like extra pepper in)

Directions

  1. Cut up everything as directed in ingredients. You will not want to add the celery or parsley to this…just discard.

  2. Place back in electric skillet or just a large skillet.

  3. Add the onion.

  4. Add cold gravy and some water to just come just barely to the top of all ingredients.

  5. Turn burner on high to bring water to a boil and turn down to either medium or medium high depending on your stove or skillet. Cook until most of the water has evaporated and everything is sort of mushy and yummy. Serve over a slice of bread.

  6. Yummy.
