Squash in a Foil Pack

Great for when grilling or camp out.

Ingredients

  • Yellow squash and/or zucchini squash
  • olive oil
  • 1/4 onion diced
  • Salt & pepper to taste

Directions

  1. Cut squash into 1 inch pieces.

  2. Place on double thickness of foil and drizzle about 1 tablespoon olive oil over all.

  3. Add diced onion.

  4. Sprinkle with salt & pepper to taste.

  5. Close up foil pouch, being sure to leave air space for steam to build.

  6. Cook on top rack of grill for 20 minutes or bury in coals for 15-20 minutes.
