Roast Carrot and Avocado Salad

Serves 6 people

Ingredients

  • 3 medium carrots, peeled & cut into chunks on an angle
  • 1 t dried fennel seeds, lightly crushed
  • 1 T olive oil
  • 1/2 t flaky sea sale
  • Ground black pepper
  • 1 - 2 avocados, peeled, stoned & cut into chunks
  • 1 T lemon juice
  • 1/2 c micro greens or other greens

Directions

  1. Pre-heat oven to 210C

  2. Place corrots on low-sided roasting tray, sprinkle with fennel seeds, s&p

  3. Drizzle with olive oil, toss

  4. Roast fro 15 – 18 min til done nicely

  5. Put avocado into a large bowl & drizzle with lemon juice

  6. Toss gently to coat

  7. Scatter avocado through carrot

  8. Drizzle with citrus sour cream (or other)

  9. Sprinkle with crunchy seeds

  10. Serve promptly at room temp
