Roast Carrot and Avocado Salad

Serves 6 peopleIngredients
- 3 medium carrots, peeled & cut into chunks on an angle
- 1 t dried fennel seeds, lightly crushed
- 1 T olive oil
- 1/2 t flaky sea sale
- Ground black pepper
- 1 - 2 avocados, peeled, stoned & cut into chunks
- 1 T lemon juice
- 1/2 c micro greens or other greens
Directions

Pre-heat oven to 210C

Place corrots on low-sided roasting tray, sprinkle with fennel seeds, s&p

Drizzle with olive oil, toss

Roast fro 15 – 18 min til done nicely

Put avocado into a large bowl & drizzle with lemon juice

Toss gently to coat

Scatter avocado through carrot
-
Drizzle with citrus sour cream (or other)

Sprinkle with crunchy seeds
-
Serve promptly at room temp
