Chocolate Chip Shortbreads Sticks

Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup confectioners' sugar
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 cup semisweet mini chips, divided
  • 1 1/2 teaspoons vegetable oil

Directions

  1. Beat butter, sugar, and vanilla in large bowl with an electric mixure until blended

  2. On low speed, beat in flour until blended

  3. Stir in 1/2 cup mini chips

  4. Cover and chill until firm

  5. Preheat oven to 350 degrees

  6. Shape heaping tablespoonfuls of dough into 3-inch-long, 1/2-inch-thick logs

  7. Place on lightly greased cookie sheets

  8. Bake at 350 degrees for 8 minutes or until golden brown

  9. Remove to wire racks to cool

  10. Melt 1/2 cup mini chips over double-boiler or in microwave safe bowl

  11. Stir in vegetables oil

  12. Dip 3/4 inch of one end of each cookie into chocolate

  13. Place on rack to dry

  14. Yeild: 3 dozen cookies
