Chocolate Chip Shortbreads Sticks

Ingredients
- 1 cup unsalted butter, softened
- 1/2 cup confectioners' sugar
- 1 teaspoon vanilla
- 2 cups flour
- 1 cup semisweet mini chips, divided
- 1 1/2 teaspoons vegetable oil
Directions

Beat butter, sugar, and vanilla in large bowl with an electric mixure until blended

On low speed, beat in flour until blended

Stir in 1/2 cup mini chips

Cover and chill until firm

Preheat oven to 350 degrees

Shape heaping tablespoonfuls of dough into 3-inch-long, 1/2-inch-thick logs

Place on lightly greased cookie sheets

Bake at 350 degrees for 8 minutes or until golden brown

Remove to wire racks to cool

Melt 1/2 cup mini chips over double-boiler or in microwave safe bowl

Stir in vegetables oil
-
Dip 3/4 inch of one end of each cookie into chocolate

Place on rack to dry

Yeild: 3 dozen cookies
