Ingredients
- 2 Tbsp vegetable oil
- 1 large onion, chopped
- 1 tsp cumin seeds
- Large bunch of fresh coriander
- 2 tsp turmeric
- 1 tsp salt
- Small green chilis or 1 tsp cayenne
- 1 can diced tomatoes
- Fresh ginger
- 1 large cauliflower, cut into large pieces
- 3 large potatoes, diced
- 2 tsp garam masala
Directions

Heat oil in pan, add onion and cumin seeds. Cook until onion is transparent.

Add chopped coriander stalks, turmeric, salt, chilis, tomatoes, and grate in some ginger. Let this cook for a little while.

Add potatoes and cauliflower, plus a bit of water, stir to cover ingredients with curry sauce.

Cover and let simmer for 20 minutes or until potatoes are tender.

Add chopped coriander leaves and garam masala shortly before serving.
