Old-fashioned oatmeal cookies

Experiment with substituting chocolate chips for the raisins or coconut for the nuts.

Ingredients
- 1/2 cup butter (or margarine), softened
- 3/4 cup brown sugar, packed
- 1 tsp vanilla extract
- 1 egg, large
- 1 cup rolled oats
- 3/4 cup all-purpose flour
- 1/2 tsp baking powder
- 3/4 tsp ground cinnamon
- 1/4 tsp salt
- 1/2 cup walnuts, chopped (optional)
- 1/2 cup raisins
Directions

Place racks in upper third of oven and preheat to 350F.

In a large bowl, beat butter, brown sugar, and vanilla until light and fluffy.

Add egg and mix until thoroughly incorporated.

Add oats, flour, baking powder, cinnamon, and salt.

Mix on low speed until blended.

Add nuts, if using, and raisins, and mix until incorporated.

Drop batter by heaping tablespoons 1-1/2 inches apart onto greased baking sheets.

Bake for 10 to 13 minutes or until golden brown. Cookies will feel soft but will firm up as they cool.

Let stand on baking sheets 2 minutes before transferring to racks to cool.
