Ingredients
- 1 lb. of dates (boxed and cut up is the best)
- 1 and 3/4 cup granulated sugar
- 1 cup water
- 1 cup chopped walnuts
- 1 cup Crisco shortening
- 1 cup light brown sugar
- 3 eggs
- 1/2 tsp. salt
- 1 tsp. baking soda
- 1 tsp vanilla
- 4 cups flour
Directions

Mix dates, water, and 3/4 cup of sugar in a sauce pan. Boil until thick. Remove from heat and stir in walnuts. Set aside to cool.

Mix together Crisco, eggs, salt, baking soda, vanilla, light brown sugar, and 1 cup of white sugar.

Add flour last a little at a time (you may need less than 4 cups), stoping before dough becomes too hard.

Separate into five discs and wrap in wax paper. Place in the fridge for about 1 hour to chill.

Working with 1 disc at a time, top with another sheet of wax paper and roll out to a rectangle that is about 1/8 of an inch thick.

Spread with filling, stopping just before the edges. Roll up like a jelly roll.

Wrap in wax paper. Place in zip-lock bag and chill for at least 1 more hour. Slice and bake as needed.

Bake at 375 or until lightly brown.
