Ingredients
- 1 eggplant - 3 inches in diameter, peeled and cut into 4 half inch thick slices.
- 4 t olive oil
- 1/2 t salt
- 1/8 t pepper
- 1/4 c pasta sauce
- 4 oz canadian bacon (optional)
- 1/2 c shredded part skim mozzarella cheese
Directions

eheat oven or toaster to 425.

Brush both sides of eggplant with the oil and season with salt and pepper.

Arrange on a baking sheet and bake until browned and almost tender, 6 to 8 minutes, turning once.

Spread 1 T of sauce on each eggplant slice.

Top, if desired with canadian bacon and shredded cheese.

Bake until cheese melts 3-5 min.

Serve hot.
