Low Carb Oven Fried Chicken

Ingredients
- boneless, skinless chicken pieces (thighs or breasts)
- 4-6 tbsp half-and-half
- 1 egg
- 2 tbsp cajun seasoning
- 1 bag (5 oz) pork rinds, crushed

In a large bowl, beat egg with half-and-half and 1 tbsp cajun seasoning

In another bowl, mix remaining cajun seasoning and pork rind crumbs

Dip chicken in liquid mixture, then dredge through crumbs to coat well; place in a greased baking pan
