Low Carb Oven Fried Chicken

Ingredients

  • boneless, skinless chicken pieces (thighs or breasts)
  • 4-6 tbsp half-and-half
  • 1 egg
  • 2 tbsp cajun seasoning
  • 1 bag (5 oz) pork rinds, crushed

Directions

  1. In a large bowl, beat egg with half-and-half and 1 tbsp cajun seasoning

  2. In another bowl, mix remaining cajun seasoning and pork rind crumbs

  3. Dip chicken in liquid mixture, then dredge through crumbs to coat well; place in a greased baking pan

  4. Bake at 375F for 45 minutes
