Bing Cherry Salad
(from cokerlj’s recipe box)
Very old recipe found in my mothers files.
I remember her making this usually for company or Christmas.

Ingredients
- 1 #2 can (2 1/2 cups) pitted Bing Cherries
- 1 cup crushed pineapple
- 2 packages cherry gelatin
- 2 cups fruit juice (assume from the drained pineapple and cherries)
- 2 cocoa-cola drinks (how many ounces were drinks back in 1950's...thinking about 2 cups coke)
- 1 cup chopped nuts
Directions
-
Drain juice from cherries and pineapple. Two cups of juice are needed, add a little water to make this amount if necessary. Bring to a boil and pour over gelatin stirring until completely dissolved.
-
When cool add cola stir and chill (ok…maybe about a total of 2 cups coke?) in refrigerator until partly congealed.
-
Add drained cherries, pineapple and nuts and pour into mold which has been rinsed in cold water.
-
When firm unmold on salad greens and serve with mayonnaise. Or you can serve this with a light cream cheese dressing which is made by thinning down cream cheese with milk or cream.
