Gingerbread Loaf

Large and versatile loaf which can be served buttered, toasted, or as a dessert with cream or yoghurt

Prep time: 35 minutes
Cook time: 50 minutes
Serves 12 people

Ingredients

  • 1 C brown sugar
  • 1 C milk
  • 150 g butter
  • 3 T golden syrup
  • 2 t baking soda
  • 2 1/4 C plain flour
  • 2 t ground ginger
  • 1 t mixed spice

Directions

  1. Melt together brown sugar, milk, butter, golden syrup and baking soda.

  2. Remove from heat and cool for 30 minutes.

  3. Stir in sifted dry ingredients, mix until smooth.

  4. Pour into paper-lined large loaf pan.

  5. Bake 40 – 50 minutes at 175oC, until golden and cooked through.
