Rice Pudding

This is a different way of making rice pudding…sounds much quicker and you don’t use the oven.

Ingredients
- 3 1/2 cup milk
- 1/2 cup rice
- 1/4 cup sugar
- 1 1/2 teaspoon vanilla
- Pinch of salt
- Raisins or berries
Directions

Boil milk and rice, then reduce to simmer on medium-low heat, stirring 30-35 minutes or until very thick.

Remove from heat and add sugar, vanilla, pinch of salt, raisins if desired, and stir until sugar is dissolved.

Pour into a medium bowl, cover, and press plastic wrap onto the surface of the pudding.

Refrigerate and serve cool, with berries if desired.
