White Cupcakes

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • pinch salt
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter at room temperature
  • 2 egg whites
  • 2 tsp almond or vanilla extract
  • 1 1/3 cup buttermilk

Directions

  1. oven to 350.

  2. In a small bowl, mix together flour, baking powder, baking soda and salt.

  3. In another bowl, beat together sugar and butter until well combined.

  4. Add egg whites, one at a time, beating well after each addition.

  5. Mix in almond extract.

  6. Alternately beat in flour mixture and buttermilk, making three additions of flour mixture and two of buttermilk, beating until smooth.

  7. Scoop batter into muffin papers; bake 20-25 minutes or until tops of cupcakes spring back when lightly touched.

  8. Allow to cool in pan on rack for 10 minutes.

  9. Remove from pan and allow to cool completely on rack before frosting.
