Chicken Florentine

Ingredients

  • Chicken legs or pieces
  • 1 bag of spinach
  • 3 cloves garlic
  • 2 Tbsp olive oil
  • 1/4 cup bread crumbs
  • 1/4 parmesan cheese
  • 3 Tbsp butter, melted

Directions

  1. Boil chicken about 20 minutes

  2. Wash and spin spinach leaves

  3. Slice garlic and saute in olive oil until light brown

  4. Add spinach and cover for 1 minute

  5. Toss spinach and cover again for 1 minute

  6. Line a baking pan with spinach

  7. Melt butter and mix with bread crumbs and parmesan

  8. Place chicken on top of spinach

  9. Sprinkle with cheese mixture

  10. Grill in oven to brown
