Ultimate Caramel Apples

Ingredients
- 6 medium Red Delicious apples
- 6 popsicle sticks
- 1 c sugar
- 1 c water
- 1/2 c heavy whipping cream
- 1/2 c shelled pistachios, chopped, divided
- 3 squares (1 oz each) white baking chocolate, chopped
- 3 squares (1 oz each) semisweet chocolate, chopped
- 1 Tbsp red-hot candies, optional
Directions

Line baking sheet with waxed paper and grease the paper; set aside

Wash and thoroughly dry apples.

Insert a popsicle sick into each; place on prepared pan.

Chill.

In a large heavy saucepan, bring sugar and water to a boil over medium heat.

Reduce heat; simmer, uncovered without stirring for 20-25 minutes, or until amber colored.

Remove from heat; gradually stir in cream.

Let stand for 10 minutes.

Place 1/4 cup pistachios in a shallow dish.

Dip apples into caramel mixture until coated, then dip the bottom of each into pistachios.

Return to baking sheet; chill.

In a small microwave-safe bowl, microwave white chocolate at 50% power for 1-2 minutes, or until melted; stir until smooth.

Transfer to a small heavy-duty resealable plastic bag; cut a small hole in the corner of the bag.

Drizzle over apples.

Repeat with semi-sweet chocolate.

Sprinkle top with remaining pistachios and red-hots if desired.

Chill until set.
