Ultimate Caramel Apples

Ingredients

  • 6 medium Red Delicious apples
  • 6 popsicle sticks
  • 1 c sugar
  • 1 c water
  • 1/2 c heavy whipping cream
  • 1/2 c shelled pistachios, chopped, divided
  • 3 squares (1 oz each) white baking chocolate, chopped
  • 3 squares (1 oz each) semisweet chocolate, chopped
  • 1 Tbsp red-hot candies, optional

Directions

  1. Line baking sheet with waxed paper and grease the paper; set aside

  2. Wash and thoroughly dry apples.

  3. Insert a popsicle sick into each; place on prepared pan.

  4. Chill.

  5. In a large heavy saucepan, bring sugar and water to a boil over medium heat.

  6. Reduce heat; simmer, uncovered without stirring for 20-25 minutes, or until amber colored.

  7. Remove from heat; gradually stir in cream.

  8. Let stand for 10 minutes.

  9. Place 1/4 cup pistachios in a shallow dish.

  10. Dip apples into caramel mixture until coated, then dip the bottom of each into pistachios.

  11. Return to baking sheet; chill.

  12. In a small microwave-safe bowl, microwave white chocolate at 50% power for 1-2 minutes, or until melted; stir until smooth.

  13. Transfer to a small heavy-duty resealable plastic bag; cut a small hole in the corner of the bag.

  14. Drizzle over apples.

  15. Repeat with semi-sweet chocolate.

  16. Sprinkle top with remaining pistachios and red-hots if desired.

  17. Chill until set.
