Pecan Apple Pancakes

Ingredients

  • 2 c. all-purpose flour
  • 1 c. sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/2 tsp ground ginger
  • 1/2 tsp ground mace
  • 1/2 tsp ground cloves
  • 2 eggs
  • 1 3/4 c buttermilk
  • 3 Tbsp vegetable oil
  • 1 3/4 c shredded peeled apples
  • 1/2 c chopped pecans

Directions

  1. In a large bowl, combine the first nine ingredients.

  2. In another bowl, combine the eggs, buttermilk and oil; stir into dry mixture until just blended.

  3. Stir in apples and pecans.

  4. Pour the batter by 1/4 cupfuls onto a greased griddle over medium-low heat.

  5. Turn when bubbles form on top; cook until second side is golden brown.
