Blueberry Pudding Cake

Ingredients

  • 2 c fresh or frozen blueberries
  • 1 tsp ground cinnamon
  • 1 tsp lemon juice
  • 3/4 c sugar
  • 1 tsp baking powder
  • 1/2 c milk
  • 3 Tbsp butter melted
  • 3/4 c sugar
  • 1 Tbsp cornstarch
  • 1 c boiling water

Directions

  1. Toss blueberries with cinnamon and lemon juice

  2. Place in greased 8 in. square baking dish

  3. In a bowl, combine flour, sugar and baking powder; stir in milk and butter

  4. Spoon over berries

  5. Combine sugar and cornstarch; sprinkle over batter

  6. Slowly pour boiling water over all

  7. Bake at 350 for 45-50 minutes or until the cake tests done
