Ingredients
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tsp cumin
- 1 tsp cinnamon
- 1 tsp sugar
- 1/2 tsp salt
- 1/2 tsp black pepper
- 8 chicken thighs
- 1 tbsp oil
- 1 cup chopped green onions
- 4 cups fresh corn kernels, ~6 lg ears
- 1 lg tomato, chopped
- 1 red bell pepper, chopped
Directions

eheat oven to 375.

Combine the first 7 ingredients (garlic powder through black pepper). Rub on chicken thighs.

Heat oil in a lg oven-proof skillet. Add chicken and cook until browned, ~5 mins per side. Transfer to a plate.

Combine onions, corn, tomato, and bell pepper in a 13 × 9″ pan. Place chicken on top of corn mixture. Cover and bake 15 mins. Uncover and bake an additional 15 mins.
