Creamy Chicken and Mushrooms
(from cokerlj’s recipe box)
I made something very similar to this the other night…used flour and milk to make gravy rather than heavy cream.
Source: Recipe Thing
Ingredients
- 4 boneless, skinless chicken breast halves (about 1 pound)
- 2 tablespoons butter/olive oil
- 3 cups sliced fresh mushrooms (I used "Baby Bella" mushrooms for more flavor.)
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 2 cups whipping cream or heavy cream (instead of heavy cream, use a little oil, flour and milk to make a gravy type thickening)
- 1/2 cup dijon mustard (not sure I would like this much mustard if any)
- salt & pepper to tase
Directions
-
Brown chicken – you may chose to cut chicken into chunks; remove from pan and set aside.
-
In the same pan, cook and stir onion and garlic in butter/olive oil still in the pan.
-
Stir in cream and mustard. (OR Stir in flour then whisk in milk.
-
Simmer over medium heat until sauce thickens slightly, stirring constantly.
-
Return chicken to pan, heat thoroughly making sure chicken is done. Toss in mushrooms towards the end. Taste and adjust salt & pepper.
-
Serve over rice or mashed potatoes.
