Tender and Tasty Pork Chops

Ingredients

  • 1 2/3 c unsweetened pineapple juice
  • 1/3 c rice wine vinegar
  • 1/4 c olive oil
  • 3 Tbsp soy sauce
  • 3 Tbsp chopped shallots
  • 4 garlic cloves, minced
  • 1 1/2 tsp salt
  • 1 tsp Louisiana-style hot sauce
  • 3/4 tsp ground cumin
  • 3/4 tsp pepper
  • 6 bone-in pork loin chops (3/4 in thick)

Directions

  1. In a large bowl, combine the first 10 ingredients

  2. Place pork chops in a large resealable plastic bag; add half the marinade

  3. Seal bag and turn to coat; refrigerate for 4-5 hrs, turn occasionally

  4. Cover and refrigerate remaining marinade for basting

  5. Drain and discard marinade

  6. Grill pork chops, covered, over medium heat for 8-10 min on each side, or until meat thermometer reads 160, basting occasionally with reserved marinade
