German Apple Cake

Ingredients

  • 3 eggs
  • 2 c sugar
  • 1 c vegetable oil
  • 1 tsp vanilla extract
  • 2 c all purpose flour
  • 2 tsp ground cinnamon
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 4 c chopped peeled tart apples
  • 3/4 c chopped pecans
  • 1 pkg (8 oz) cream cheese, softened
  • 2 tsp butter, softened
  • 2 c confectioners' sugar

Directions

  1. In a large bowl, beat the eggs, sugar, oil and vanilla

  2. Combine the flour, cinnamon, baking soda, and salt

  3. Add to egg mixture and mix well

  4. Fold in apples and nuts

  5. Pour into a greased 13×9×2 in baking dish

  6. Bake at 350 for 55-60 min or until toothpick comes out clean

  7. In a small mixing bowl, beat cream cheese and butter

  8. Add confectioners’ sugar, beating until smooth

  9. Spread over cake
