Mushroom Cheese Chicken

Ingredients

  • 4 boneless, skinless chicken breast halves (5 oz each)
  • 1/2 tsp salt
  • dash pepper
  • 2 Tbsp all purpose flour
  • 1/2 c plain yogurt
  • 1/2 c shredded mozzarella cheese
  • 1/2 c canned mushroom pieces
  • 1 Tbsp diced pimientos
  • 1 Tbsp minced fresh parsley
  • 1 Tbsp minced chives
  • 1 Tbsp plain yogurt
  • 1 Tbsp dry bread crumbs
  • 1/2 tsp paprika

Directions

  1. Flatten chicken to 1/8 in thickness; sprinkle with salt and pepper

  2. In a small bowl, combine the flour and 1/2 c yogurt until smooth

  3. Stir in cheese, mushrooms, pimientos, parsley and chives

  4. Spread down the center of each piece of chicken

  5. Roll up and tuck in ends; secure with toothpicks

  6. Place seam side down in a greased 11×7×2 in baking dish

  7. Brush 1 Tbsp yogurt over chicken

  8. Combine bread crumbs and paprika; sprinkle over the top

  9. Bake, uncovered, at 350 for 20-25 min or until chicken juices run clear

  10. Remove toothpicks before serving
