“Spicy” Jambalaya Rice

This serves our whole family. Occasionally, I add vegetable on the side.

Prep time: 10 minutes
Cook time: 40 minutes

Categories: one pot, quick and easy

Ingredients

  • 1/4 cup Caleb's butter
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 (8 oz) package John Soule's precooked chicken, diced
  • 1 package Ekrich Skinless Smoked Sausage
  • 1 can French onion soup
  • 1 can tomato soup
  • Garlic powder
  • Tony Chachere's
  • 3 cups beef broth
  • 3 cups instant rice

Directions

  1. Saute onion and bell pepper in butter until soft. May also add chicken and sausage in at this time.

  2. When onions and peppers are cooked to your liking and meat is heated through, add the two soups, the spices, and the broth. Bring to a boil and let simmer 8-10 minutes.

  3. Mix in rice, cover pot, and remove from heat. Let stand 6-7 minutes.
