Curry Noodle Soup

if you like a little spice, try this.

Serves 4 people

Ingredients
- 1 Red Bell Pepper, cut into strips
- 3 Carrots, peeled and cut into slices
- 1 jar Thai Kitchen Red Curry Paste
- 1 cup chicken or vegetable broth
- Rice Noodles
- Cilantro
- Olive oil - 1-2 tbls.
Directions

Boil a pan of water for the noodles, once the water is boiling, turn off heat and put in noodles.

Heat olive oil in a fry pan, add carrots, bell pepper and 1/2 the jar of curry paste. Mix well.

Saute for 2-3 mins.

Add 1 cup chicken or vegetable broth.

Add coconut milk.

Simmer for 5 minutes.

Add soy sauce if desired.

Put noodles in bowls. Top with a ladle or 2 of soup. Top with chopped cilantro.
